Happy Cinco De Mayo – easy fajitas

My favorite beef fajita recipe is so simple
Just marinate the beef in 2/3 C lime juice, 1 tsp salt, 1/2 tsp pepper for a couple hours then grill
Don’t marinate too long or the acid in the lime will “cook” the meat
I use flank steak. I love the way the lime flavors the meat perfectly.

You know the drill……cook up peppers and onions and whatever else you want, wrap up – top with sour cream, salsa, avocado, cheese – however you like yours. So easy and delish!
