Chicken Alfredo Flatbread

The Olive Garden has this delicious Grilled Chicken Flatbread on their appetizer menu.  I made it at home the other night and it turned out really good.  Here’s my version:

Garlic flavored Naan (Indian flatbread I found at Trader Joe’s)
2 boneless, skinless chicken breasts sliced into thin strips and sauteed in olive oil with seasoning salt, pepper and garlic powder.
Alfredo sauce (I’m not a big fan of jarred Alfredo sauce, so I made my own by sauteing 2 minced garlic cloves in 1/2 cup chicken broth for a few minutes, then added one pint of whipping cream and about 1 and 1/2 cups of shredded parmesan and let that simmer slowly, stirring frequently, till it reduced and thickened – it took a while – about 15-20 minutes.
Jarred roasted red peppers (which I found at the dollar store)
Mozarella cheese

I lined a baking sheet with foil for easy cleanup, placed the naan on the foil, then spread on some of the alfredo sauce, then topped with the chicken, peppers and mozarella. Use as much or as little of the ingredients as you like. Broil till the cheese is completely melted and bubbly.

Farmers Markets

Local Farmers Markets are so much fun…Suzanne and I went to the Burien Farmers Market today where we found some great deals on annuals. I spent a total of $26.50 and created all these planters…..

Geraniums and Verbena
Marigolds
Petunias (including Wave)
Colieus
Bouquet of Sweet Peas

I also bought a Jack-Be-Little pumpkin plant and Suzanne bought me the bouquet of sweet peas. It always feels good to know you are supporting local businesses. Click here to find out where the nearest Farmers Market is in your area..

Birdcage Terrarium

While at a cute little gift shop, I saw and fell in love with a birdcage terrarium. Priced at $55, it was way out of my budget, but it got me thinking….I had a birdcage at home, and a bird’s nest.  So here is my version of a birdcage terrarium; and I love it.  I started with the birdcage I bought at a garage sale and never really knew what to do with.  Luckily, the bottom is removable on this cage and that made it easier to assemble. I bought 3 plants: a fern, an asparagus fern and a nerve plant ($2.99 each), plus a clear plastic tray (.99 cents) which I had to cut the upper lip off to get it to fit. I put all three plants (pots and all) in the plastic tray.  I have some birds nests on the front porch I use for decoration, so I used one of those and put in a few toasted marshmallow Jelly Bellys as bird eggs.  Lastly, I stuck in a small branch of corkscrew willow. Wa – la!  A totally cute birdcage terrarium for around $10!.
