Red Velvet Cake with Cream Cheese Frosting

My daughter made a Red Velvet cake last tonight.  Bless her little cotton pickin’ heart…..


Red Velvet Cake
1C. shortening
1-3/4C. sugar
2-1/2C. cake flour
3/4 tsp. salt
2 large eggs
1C. buttermilk
1tsp. vanilla
1tsp. baking soda
1-1/2tsp. vinegar
2tsp. red food coloring
3tsp. cocoa powder

Preheat the oven to 350 degrees.  Spray two 10″ cake pans with non-stick spray.  In a mixing bowl, blend the shortening and sugar with an electric mixer.  In another bowl, sift together the flour and salt. In a third bowl, mix the eggs, buttermilk, vanilla, baking soda, and vinegar.  Alternately add the flour mixture and the buttemrilk mixture to the shortening mixture, mixing after each addition.  In a small bowl, mix the food coloring with the cocoa.  Add the cocoa mixture to the mixing bowl and blend till just combined.  Pour the batter into the cake pans and bake for 25 minutes or till toothpick comes out clean.  Cool completely before frosting.
Cream Cheese Frosting:
1 – 8oz package of cream cheese, plus 1/2 of an 8oz package (12oz total)
3/4C. butter, softened
1-1/2 lbs. powdered sugar
2tsp. vanilla
In a mixing bowl, mix the cream cheese with the powdered sugar until smooth.  Add the vanilla and mix well.

Date night idea – Burien Little Theatre – just mention "twofrugalchicks" to get a $2 discount!!

Burien Little Theatre is ending its 30th season with the Bill and Peggy Hunt Playwrights Festival.  Burien Little Theatre is presenting the world premiere of the two winning plays of the festival for the next two weekends, starting tonight.  http://burienlittletheatre.org/  


Ticket prices are already a steal at just $10 for two shows in an evening.  However, if you say you saw them here, Burien Little Theatre will discount those tickets by $2 to just $8 each!


Sounds like a fun date night to me.

Urban beer hike – what’s not to love??

Here is a link to a story I loved featuring local businesses. Sounds like a great hike to me. I LOVE all these places. It’s only 3.5 mile hike and you eat and drink on the way!

I love how they map out these stops as the “Triangle of Deliciousness”. It’s so fun to have some great places to go so close to home. Below is a list of my humble experiences at these stops.

Big Al’s – they don’t serve food, but you can bring food in. I’ve brought in pizza from Proletariat and BBQ from Uncle Mikes. They even have paper plates, napkins and utensils on hand. Their beer is fantastic and you can try out samples.
Proletariat – I have never had a pizza here that I didn’t love. This place gets packed, so get there early if you want a table
The Company – last time I was there they had Rainier on tap! How cool is that? Takes me right back to high school (hope my Mom doesn’t read this). I also had the steak kabobs and they were delicious. Can’t wait to go back.
Full Tilt – they make their own hot fudge sauce and it is divine. I am kind of a vanilla ice cream kinda girl so he made me a sundae with hot fudge and whip cream and it was fantastic. They also have pinball, skee ball and video games.
Salvadorean Bakery – I love their breakfasts. Huevos Rancheros with beans and thick corn tortillas are fantastic. They also will make you a latte you can enjoy with any number of  freshly baked goods.
Super Deli Mart – Their british hoagie is so good it’s a destination stop for me. I’ve taken friends there just to sit and eat a sub and enjoy a cold beer. The owner is so generous and fills me in on all the latest brews available and lets you sample whatever is on tap..
